A twist on a classic cosmo, this one replaces the traditional cranberry juice with pomegranate and tops it off with sparkling wine. For an even more summery cocktail, replace the bubbly with lemonade.
Sparkling Pomegranate Cosmopolitan
Makes 10 cocktails
1/2 cup lime juice (from 3 to 4 limes)
1 1/4 cups pomegranate juice
1 1/2 cups good-quality vodka
1/2 cup good-quality gin
3/4 cup orange liqueur (Cointreau or Triple Sec)
1 bottle sparkling wine (I use Cava from Spain)
For garnish: zest from 1 lime mixed with granulated sugar
Coat the rim of 10 champagne flutes with lime juice and the lime zest/sugar mixture.
Mix together juices, vodka, gin, and orange liqueur. Shake with ice. Distribute between the 10 flutes.
Top up with the sparkling wine.
